Making dosa is not everyone’s cup of tea and several local eateries which serves South Indian dishes fail at it miserably. However, one South Indian food shop in Fatehgarh in Uttar Pradesh’s Farrukhabad district stands out from the rest. The shop generates a daily income of approximately Rs 3,000 to Rs 4,000, amounting to a monthly revenue of Rs 60,000 to Rs 70,000. This 25-year-old shop has withstood the test of time, maintaining its renowned taste and quality throughout the decades.

Pandey shared that various types of spices are used in the dosa made at his shop, all home-made, which in turn enhances its taste. Dosa lovers flock to this place from morning to evening with the paneer dosa being the favourite among many.

Preparing a delicious dosa requires a large pan and premium-quality oil. The method starts with heating the pan and adding a liberal amount of oil. The dosa batter is then spread evenly over the pan. As it cooks, the dosa transforms into a golden-brown colour. Once it’s cooked, paneer and fresh green vegetables are added on top. The dosa is then served on a plate, accompanied by sambhar, coconut chutney, and a variety of other traditional chutneys.
